Help! We need advice! What kind of dog shall we get?

Is this our perfect match?

I soooo want a dog. We haven't had one for years. Not because we don't love them; but because we want to be the right kind of dog/parents. I think I'm ready to take the plunge. But the question is; just what kind of dog will fit into our family? We are empty nesters with grandkids that visit us; so our canine friend must be kind and patient. We don't care for high energy jumpers and yappers; but we are walkers and can commit to daily walks. We have a big yard but may eventually buy a smaller place; but will likely always have some kind of yard. My hubby works full time and I work 6 1/2 hours per day during the school season with summers off. So we need a pet that can handle some alone time. I want a dog with a gentle face; like a golden retriever or spaniel has. Nice eyes are important. What do you think? What type of dog would work in our household? Send me your comments, I'd love to hear. Right now; Field Spaniels top my list; but I'm worried about leaving them alone. Thanks for your help!

Mediterranean Spinach and Rice

I've decided to pursue a healthier lifestyle by learning to cook some heart-healthy Mediterranean Dishes. This is a very tasty dish--I had it for lunch today! (Much better than the tuna/white bean salad from yesterday--the cat got the lion's share of that lunch!) This recipe is very nice indeed if you love spinach. I'd give it 4 stars.


Spinach and Rice
Makes 6, ½ cup servings

Ingredients:

•2 pounds fresh spinach, rinsed and drained
•¼ cup olive oil
•2 medium white onions
•2 small garlic cloves
•1 cup long grain white or brown rice
•2 tablespoons tomato paste
•2 bay leaves
•2 cups chicken stock (low-sodium preferred)
•salt and pepper to taste
1.In a large saucepan heat olive oil over medium-high heat. Add onions, garlic and rice. Saute until onions are translucent. Stir in tomato paste and then add spinach, bay leaves, salt and pepper. Mix well.
2.Pour in chicken stock and cover saucepan. Simmer on medium heat until rice is tender and liquid is absorbed. Remove bay leaves and serve.
